  • 1 large egg
  • ½ cup freshly grated Parmesan
  • ¼ cup cornstarch
  • Salt and pepper, to taste
  • 2 tablespoons fresh churned garlic butter
  • 12 cups shredded cheddar

Instructions

  1. Prepare the zucchini by squeezing out excess moisture using a cheesecloth or kitchen towel.
  2. In a mixing bowl, combine the drained zucchini with the egg, Parmesan, cornstarch, salt, and pepper until well mixed.
  3. Heat garlic butter in a non-stick skillet over medium heat.
  4. Form patties from the zucchini mixture and place them in the skillet.
  5. Cook each patty for 3–4 minutes per side until golden brown and crispy.
  6. Assemble the sandwich by layering shredded cheddar on one patty and topping it with another patty. Cook for an additional 3 minutes until the cheese melts.
  7. Let cool slightly before slicing and serve warm.
