  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 1/2 Red Capsicum/Bell Pepper, diced
  • 1 Brown/Yellow Onion, diced
  • 2 Turkey Bacon Slices/Rashers, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 180C (350F) and line a square baking dish (9 x 9 in) with baking paper.
  2. Grate the zucchini and carrot into a colander, sprinkle with salt, and let sit for about 10 minutes to remove excess moisture.
  3. In a frying pan over medium heat, cook the diced onion and turkey bacon in olive oil until golden brown. Allow to cool slightly.
  4. Squeeze out excess moisture from the zucchini and carrot mixture. Combine in a mixing bowl with capsicum, cooked onion and turkey bacon, cheese, flour, eggs, milk, olive oil, salt, and pepper; mix until well combined.
  5. Pour into the prepared baking dish and smooth the top. Sprinkle remaining cheese on top and bake for 35-40 minutes until firm to touch. Allow cooling before cutting.
