  • 1 red onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 can pre-cooked butter beans (13.4 ounces, drained and rinsed)
  • 1 can full-fat coconut milk (13.5 ounces)
  • 2 tablespoons lemon juice
  • 1 teaspoon ground turmeric
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • Optional: red chili flakes
  • Optional: hemp seeds

Instructions

  1. In a large saucepan, heat oil over medium heat. Sauté finely chopped red onion and minced garlic for about 5 minutes until softened.
  2. Add butter beans, coconut milk, lemon juice, turmeric, black pepper, smoked paprika, oregano, and salt. Stir to combine.
  3. Simmer for about 5 minutes while stirring until the mixture thickens slightly and becomes creamy.
