  • 3 tablespoons cornstarch
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 cups fresh pineapple chunks
  • 2 tablespoons neutral oil

Instructions

  1. Press the tofu between clean towels for 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into cubes and coat evenly with cornstarch.
  3. Heat oil in a skillet over medium-high heat and cook the tofu until golden brown, about 6-8 minutes total.
  4. In the same pan, sauté sliced peppers and onions for about 5 minutes; add minced garlic and ginger, cooking until fragrant.
  5. Stir in pineapple chunks and caramelize for 2-3 minutes.
  6. Combine soy sauce, rice vinegar, and maple syrup in a bowl; pour over the mixture in the skillet.
  7. Return crispy tofu to the pan, stirring gently until everything is well-coated.
