  • 1/23/4 cup Italian dressing
  • 1/2 cup roasted red peppers (diced)
  • 1/2 yellow onion (diced)
  • 2 oz black olives (sliced)
  • 1/2 cucumber (peeled and diced)
  • 12 slices chopped chicken
  • 10 chopped cheddar cheese sticks
  • 1 cup sliced turkey sausage
  • 1/4 cup grated Parmesan cheese
  • Small pie pumpkin (for serving)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and cool.
  2. In a large mixing bowl, combine the cooked pasta, diced vegetables, chopped chicken, turkey sausage, and cheese sticks.
  3. Pour in 1/2 cup of Italian dressing and toss until well coated. Adjust seasoning as needed.
