  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt chopped dark chocolate and unsalted butter in intervals until smooth.
  3. Stir in brown and granulated sugars until combined.
  4. Add eggs one at a time, whisking after each addition.
  5. Gradually fold in sifted flour and salt until just combined.
  6. Pour the batter into the prepared tin and bake for 25-30 minutes.
  7. Once baked, poke holes in the brownies and pour warm espresso over them, then allow cooling completely before adding the topping.
