  • 1/2 cup salted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, mix vegetable oil and sugar; add eggs one at a time and then stir in vanilla.
  3. In another bowl, combine flour, cinnamon, salt, baking soda, and baking powder. Gradually mix into wet ingredients.
  4. Fold in shredded zucchini, carrot, oats, and walnuts.
  5. Pour batter into the prepared pan and bake for about 24 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the cream cheese frosting by beating butter and cream cheese together; add vanilla and powdered sugar until smooth.
  7. Once cooled, frost the bars evenly before cutting into squares.
