  • 2 medium zucchini
  • 1 1/2 cups pre-cooked chicken (cubed or shredded)
  • 3 tablespoons olive oil
  • ½ medium onion (diced)
  • ½ teaspoon garlic powder
  • 7 cherry tomatoes (halved)
  • ½ cup grated Parmesan cheese
  • ¾ cup heavy cream
  • ½ cup grated Colby jack cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. Trim zucchini, halve lengthwise, and scoop out the flesh. Reserve some flesh.
  3. Bake zucchini halves cut-side up for about 15 minutes.
  4. In a skillet, sauté onion until softened, then add tomatoes, chicken, reserved zucchini flesh, garlic powder, and heavy cream.
  5. Stir in Parmesan cheese and simmer until slightly thickened.
  6. Stuff the zucchini with the mixture, top with Colby jack cheese, and bake for another 10 minutes until bubbly.
