  • 1 ½ pounds mini potatoes (red creamer or similar)
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Wash mini potatoes thoroughly under cold water and set aside.
  4. In a bowl, mix cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato using a paring knife and place in the lemon water to prevent browning.
  5. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  6. Drain the carved potatoes from the lemon water and toss them in the seasoning mixture until evenly coated.
  7. Place the seasoned potatoes on the baking sheet face side up and bake for about 30 minutes until golden brown and tender.
