  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box corn muffin mix (8.5 ounces)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and drain it thoroughly to remove excess moisture.
  3. In a large mixing bowl, combine grated zucchini, chopped onion, half of the cheddar cheese, corn, jalapeño, eggs, garlic powder, cumin, salt, and black pepper. Mix until well combined.
  4. Gently fold in the corn muffin mix until just incorporated.
  5. Grease a baking dish and pour the mixture into it. Spread evenly and top with remaining cheddar cheese.
  6. Bake for approximately 50 minutes or until golden brown and set in the middle.
  7. Let cool slightly before slicing and serve warm.
