  • 1 cup finely chopped cooked corned beef
  • 1 cup shredded Swiss cheese
  • 3/4 cup drained sauerkraut
  • 4 ounces softened cream cheese
  • 1/2 cup rye breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola)
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a mixing bowl, combine corned beef, Swiss cheese, sauerkraut, and cream cheese until well mixed.
  2. Chill the mixture for 20–30 minutes to firm it up.
  3. Roll tablespoon-sized portions into balls.
  4. Set up three bowls for breading: one with flour, one with beaten eggs, and one with rye and panko breadcrumbs.
  5. Coat each ball in flour, dip in egg, then roll in breadcrumbs.
  6. Heat oil in a frying pan to 350°F (175°C) and fry balls in batches for 3–4 minutes or until golden brown.
  7. Drain on paper towels and serve with the spicy dipping sauce.
