  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well mixed to form the crumble mixture.
  3. Press half of the crumble mixture into the bottom of the prepared baking dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin mixture over the crumble base and spread evenly.
  6. Top with the remaining crumble mixture and optional chopped walnuts.
  7. Bake for 30-35 minutes until golden brown and set. Let cool before slicing into squares.
