  • ½ cup brown sugar packed
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • Pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In one bowl, mix flour, pumpkin spice, and salt; set aside.
  3. In another bowl, beat cream cheese and butter until creamy. Add granulated sugar and brown sugar; mix until fluffy. Blend in egg yolk.
  4. Gradually mix in the flour mixture until dough forms.
  5. Roll dough into balls (2 inches) and coat in coarse sugar before placing on the baking sheet.
  6. In a separate bowl, whisk together filling ingredients: egg, brown sugar, salt, pumpkin spice, milk, pumpkin puree, and vanilla extract.
  7. Create an indentation in each cookie ball using your thumb; fill with the pumpkin mixture.
  8. Bake for about 15 minutes or until edges are golden.
