  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 180 g feta cheese
  • 8 garlic cloves
  • 2 big handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • Handful walnuts
  • Thyme sprigs
  • Salt and pepper to taste
  • Chili flakes (optional)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the butternut squash; place in an oven-safe dish.
  3. Add unpeeled garlic cloves and thyme; drizzle with olive oil and season with salt and pepper.
  4. Place feta in the center of the dish and drizzle with more olive oil.
  5. Roast for about 25 minutes until pumpkin is tender.
  6. Cook pasta in salted water according to package instructions, reserving some pasta water.
  7. Mash roasted garlic in the dish, crumble feta into the pumpkin mixture, then stir in spinach and drained pasta with reserved water to achieve desired creaminess.
  8. Garnish with walnuts and chili flakes before serving.
