  • 0.5 teaspoon salt
  • 1 cup pumpkin puree (canned or fresh)
  • 0.5 cup vegetable oil
  • 1.5 cups sugar
  • 0.5 teaspoon ground cinnamon
  • Cream cheese filling (optional): softened cream cheese, sugar, vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together the sifted flour, baking soda, salt, and ground cinnamon.
  3. In another bowl, mix the pumpkin puree, vegetable oil, and sugar until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just combined; do not overmix.
  5. Grease your loaf pan and pour half of the batter in.
  6. If desired, spread a cream cheese filling over the first layer before adding the remaining batter on top.
  7. Bake for about 50 minutes or until a toothpick comes out clean from the center.
