  • 2 ½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 sticks unsalted butter (8 oz), diced and very cold
  • 69 tablespoons ice water
  • 2 large honey crisp apples, peeled and diced
  • 3 tablespoons salted butter (for filling)
  • 18 oz fresh blackberries
  • 2/3 cup brown sugar
  • 2 tablespoons fruit juice
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raw or turbinado sugar (for sprinkling)
  • 1 egg (for egg wash)

Instructions

  1. For the crust, combine flour, sugar, and salt in a stand mixer. Add cold butter and mix until coarse. Gradually add ice water until dough forms. Chill for at least an hour.
  2. Prepare the apple filling by cooking diced apples with salt, fruit juice, vanilla, cinnamon, and brown sugar until syrupy; let cool.
  3. Roast blackberries with sugar and vanilla until thickened; let cool.
  4. Roll out the chilled dough and cut into pumpkin shapes. Assemble by adding fillings between two dough pieces, sealing edges well.
  5. Bake at 375°F for about 25 minutes or until golden brown.
