  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup Irish barley tea
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 cup chicken broth
  • 1 tablespoon butter
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a large skillet over medium-high heat, heat olive oil and cook chicken for 6-7 minutes per side until golden brown. Remove and keep warm.
  3. Sauté onion in the same skillet until translucent, then add garlic and cook for an additional minute.
  4. Pour in the barley tea, scraping up any browned bits. Simmer for about 5 minutes.
  5. Stir in chicken broth and simmer for another 5 minutes.
  6. Reduce heat to low, add heavy cream slowly while stirring continuously. Incorporate Dijon mustard and thyme; simmer until thickened.
  7. Return chicken to the skillet, spooning sauce over it for about 2-3 minutes to absorb flavors. Stir in butter before serving.
  8. Garnish with parsley before serving.
