  • 1 medium yellow onion, diced
  • 4 oz spaghetti or angel hair pasta, broken into thirds
  • 1 can chili beans (15 oz), undrained
  • 1 can tomato juice (46 oz)
  • 12 Tbs. mild chili powder
  • 1 Tbs. granulated sugar
  • 1 tsp. kosher salt
  • 1 tsp. pepper
  • Shredded cheddar cheese for garnishing
  • Corn chips
  • Sour cream

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add the diced onion to the pot and sauté until translucent, about 5 minutes.
  3. Stir in mild chili powder, salt, and pepper to combine flavors.
  4. Mix in broken spaghetti, undrained chili beans, tomato juice, and sugar until well blended.
  5. Bring to a gentle boil, then reduce heat to low and simmer covered for 30 minutes until pasta is tender.
  6. Serve hot with optional garnishes like shredded cheddar cheese or corn chips.
