  • 45 medium organic russet or Yukon potatoes, peeled and cubed
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp unsalted butter
  • 1/2 red onion, chopped
  • 6 garlic cloves, minced
  • 4 cups organic vegetable stock/broth
  • 1 cup organic heavy cream (or plant-based alternative)
  • 12 cups freshly grated sharp cheddar cheese
  • On Everything All-Purpose Blend
  • smoked paprika
  • white cooking apple vinegar

Instructions

  1. Peel and cube the potatoes. Chop the onion and mince the garlic.
  2. In a pot over medium heat, melt olive oil and butter. Sauté onion until translucent, then add garlic.
  3. Stir in cubed potatoes along with seasonings and vinegar.
  4. Pour in vegetable stock and bring to a boil. Reduce heat and simmer until potatoes are tender (about 25 minutes).
  5. Blend part of the soup for creaminess, then stir in heavy cream and cheddar until melted.
  6. Serve hot with extra cheese on top if desired.
