  • 1 3/4 lb boneless, skinless chicken breast (cubed)
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers (diced)
  • 1 large red onion (diced)
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together marinade ingredients: ketchup, brown sugar, soy sauce, pineapple juice, olive oil (2 tbsp), rice vinegar, garlic, ginger, and sesame oil. Season with salt and pepper.
  2. Place chicken in a resealable bag and pour half of the marinade over it. Seal and refrigerate for one hour.
  3. Preheat grill to medium heat (400°F). Drizzle remaining vegetables with olive oil and season.
  4. Assemble skewers by threading chicken, vegetables, and pineapple.
  5. Grill for about 5 minutes per side while brushing with reserved marinade until chicken reaches an internal temperature of 165°F.
