  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil and sauté chopped onion and minced garlic until fragrant (about 2 minutes).
  3. Add ground turkey to the skillet and cook until browned (5-6 minutes), breaking it up as it cooks.
  4. Stir in diced tomatoes, Italian herbs, salt, and black pepper; let simmer for about 3-4 minutes.
  5. Layer half of the sliced zucchini in the prepared baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat layers with remaining ingredients.
  6. Bake uncovered for 30-35 minutes until bubbly and golden brown on top. Let cool for about 5 minutes before serving.
