  • 2 ears of corn (shucked and sliced)
  • 2 (4 oz) chicken or turkey cajun-style andouille sausage links (sliced)
  • 1 lb large raw shrimp (peeled and deveined)
  • 6 Tbsp butter
  • 2 Tbsp fresh lemon juice
  • 2 tsp chopped fresh thyme
  • 2 cloves garlic (minced)
  • 2 tsp Old Bay seasoning
  • Fresh parsley for garnish

Instructions

  1. Preheat your grill to medium-high heat (425°F).
  2. Microwave the potatoes for 3 minutes until slightly tender; slice them.
  3. Prepare four double-lined foil sheets and layer the potato slices in the center.
  4. Top with corn, sausage slices, and shrimp.
  5. In a bowl, melt butter and mix in lemon juice, thyme, and garlic; drizzle over each packet.
  6. Season with Old Bay seasoning, seal tightly, and grill sealed-side up for 12-15 minutes until cooked through.
