  • 1 cup unsweetened pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • ¼ cup chicken broth
  • 2 teaspoons freshly grated ginger
  • 1 ½ teaspoons minced garlic
  • Sliced green onions (for garnish)

Instructions

  1. In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic to create the marinade.
  2. Reserve 1 cup of the marinade for basting later. Add the remaining marinade and chicken thighs to a ziplock bag and seal.
  3. Marinate in the refrigerator for at least 3 hours or overnight for deeper flavor.
