  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 3 cloves garlic
  • 2 tsp ground cumin
  • 1 1/2 tsp ancho chili powder
  • 12 mini corn taco shells
  • toppings: avocado, onion, cilantro

Instructions

  1. Marinate the chicken: Combine lime juice, olive oil, garlic, cumin, chili powder, cilantro, salt, and pepper in a resealable bag with the chicken. Marinate in the fridge for at least one hour.
  2. Preheat the grill to medium-high heat (425-450°F).
  3. Grill the chicken for 5-6 minutes on each side until fully cooked (165°F internally). Let it rest before dicing.
