  • 1½ cups long grain white rice
  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • Fresh cilantro
  • Assorted vegetables: red bell pepper, red onion, grape tomatoes, jalapenos

Instructions

  1. Cook the rice according to package instructions. Fluff with a fork and mix in lime juice and chopped cilantro.
  2. In a bowl, combine olive oil, chili powder, kosher salt, black pepper, garlic powder, and oregano. Marinate chicken strips for at least 10 minutes.
  3. Preheat grill or grilling pan over medium-high heat and grill marinated chicken for 6–8 minutes per side until cooked through.
  4. Chop vegetables while chicken cooks. Grill sweet corn until slightly charred; cut off kernels.
  5. Assemble bowls with rice at the base topped with grilled chicken, corn, diced veggies, avocado slices, salsa, sour cream, and fresh cilantro.
