  • 3 bell peppers
  • 1 pound ground chicken
  • ⅔ cup uncooked white rice
  • ½ cup feta cheese
  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • Fresh dill
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup water
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Cook the rice according to package instructions.
  2. Slice the bell peppers in half and remove seeds. Place cut-side up in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add ground chicken, salt, and pepper; cook until browned.
  4. Stir in Italian seasoning, diced onion, garlic, and zucchini; cook for another two minutes.
  5. In a bowl, mix cooked rice with chicken mixture, cherry tomatoes, olives, half of the feta cheese, and dill until combined.
  6. Stuff each pepper with the mixture and sprinkle remaining feta on top.
  7. Pour water into the baking dish to steam the peppers and cover with foil.
  8. Bake for 40 to 45 minutes until peppers are tender. Serve with lemon wedges.
