  • ½ cup unsalted butter
  • 2⅔ cups flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar (for sprinkling)
  • ½ cup powdered sugar (for glaze)
  • 12 tbsp fresh squeezed lemon juice (to taste)
  • 12 tbsp milk (to taste)
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a microwave-safe bowl, melt the molasses and butter together. Allow to cool.
  3. In a separate bowl, mix flour, ground ginger, baking soda, ground cinnamon, ground cloves, ground nutmeg, and salt.
  4. Combine the brown sugar, sour cream, whole milk, and egg into the cooled molasses mixture.
  5. Gradually fold the wet ingredients into the dry until just combined; avoid overmixing.
  6. Fill the muffin tray and sprinkle with coarse sugar if desired.
  7. Bake for 5 minutes at high heat; reduce temperature to 350°F for an additional 11–14 minutes until done.
  8. Cool briefly before transferring to a wire rack.
  9. For the glaze, mix powdered sugar with lemon juice until creamy and drizzle over cooled muffins.
