  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Juice and zest of 1 large lime
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped (seeds removed for less heat)
  • 2 large bell peppers (red and green)
  • 1 large red onion
  • Salt to taste

Instructions

  1. Cut chicken into bite-sized pieces and place in a zip-top bag.
  2. In a bowl, mix canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt. Pour over chicken in the bag and marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Cut bell peppers and onion into chunks. Thread marinated chicken and veggies onto skewers.
  5. Grill kebabs for about 6 to 8 minutes until chicken is cooked through, turning once.
  6. Serve warm with fresh cilantro and lime juice over the top.
