Cucumber Shrimp Salad is a light and refreshing dish that perfectly captures the essence of summer. This vibrant salad features succulent shrimp paired with crisp cucumbers, aromatic green onions, and a touch of fresh dill, all brought together by a creamy lime dressing.

  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. To make the dressing, whisk together mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, minced garlic, salt, and pepper in a mixing bowl. Set aside.
  2. Boil water in a pot over medium-high heat. Add shrimp and cook for 2 to 3 minutes until pink and opaque.
  3. Prepare an ice water bath. Transfer cooked shrimp into the ice bath to cool for about 3 minutes before draining.
  4. Chop cooled shrimp into bite-sized pieces. In a large bowl, combine shrimp with diced cucumber and sliced green onions. Pour in the dressing and stir gently.
