  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 large egg (for filling)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, and spices until well combined.
  3. Gently fold in the flour along with baking powder and baking soda until just mixed; avoid overmixing.
  4. In another bowl, combine softened cream cheese with an egg, sugar, and flour until smooth for the filling.
  5. Pour two-thirds of the pumpkin batter into the pan. Layer with cream cheese filling before topping with remaining batter.
  6. Bake for about 48 minutes or until golden brown; check doneness with a toothpick.
  7. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
