  • 1 cup fresh cranberries (or frozen)
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each sweet potato in aluminum foil and place them on a baking sheet. Bake for 45-60 minutes until fork-tender.
  2. Let baked sweet potatoes cool slightly, then cut in half lengthwise and scoop out most of the flesh into a mixing bowl.
  3. Add chopped apples, cranberries, brown sugar, cinnamon, butter, and salt into the bowl. Mix until well combined.
  4. Spoon the filling back into the sweet potato skins and pack tightly.
  5. Return stuffed sweet potatoes to the baking sheet and bake at 375°F (190°C) for about 25 minutes until heated through.
