  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream (softened)
  • 2 cups whipped cream (for topping)
  • Additional chopped Oreo cookies (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the vanilla extract.
  3. In another bowl, whisk together the cake flour, baking powder, and kosher salt. Gradually add this dry mixture to the butter-sugar mixture alternately with milk, beginning and ending with flour. Gently fold in the chopped Oreo cookies.
  4. Divide batter evenly between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Allow to cool for about 10 minutes before transferring to a cooling rack.
  5. Once cooled, layer one cake on a serving platter and top with Cookies and Cream ice cream. Place the second layer on top, spread whipped cream over the entire cake, and garnish with additional chopped Oreos.
  6. Freeze the assembled cake for at least 4 hours before serving.
