  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 1/2 ripe avocados (diced)
  • 2 medium Roma tomatoes (chopped)
  • 1/2 cup chopped red onion
  • 1 clove garlic (minced)
  • 1 Tbsp fresh lime juice

Instructions

  1. In a mixing bowl, combine lime zest, lime juice, olive oil, honey, cilantro, minced garlic, salt, and pepper. Add chicken breasts to marinate for at least 15 minutes.
  2. Preheat the grill or grill pan over medium-high heat; brush lightly with olive oil.
  3. Grill marinated chicken for about 5-7 minutes on each side until fully cooked (internal temperature should reach 165°F).
  4. Meanwhile, prepare the avocado salsa by mixing diced avocados, tomatoes, red onion, minced garlic, and lime juice in another bowl.
