  • 10 slices turkey bacon, diced
  • 3 cups shredded chicken
  • 1 oz package dried ranch dressing seasoning
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups heavy cream
  • 2 cups half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 lb dry large elbow pasta

Instructions

  1. Boil the elbow pasta according to package instructions until just one minute shy of al dente. Drain and set aside.
  2. Preheat your oven to 375°F (190°C) and butter a 3-quart baking dish.
  3. In a large skillet, cook the diced turkey bacon over medium-low heat until crispy. Remove from the skillet, leaving about one tablespoon of fat.
  4. Increase heat to medium and add the shredded chicken along with ranch seasoning; cook for about 2-3 minutes until well coated.
  5. In the same skillet, melt butter and sauté minced garlic for about 30 seconds. Whisk in flour to create a paste, then gradually add heavy cream and half-and-half while whisking vigorously until thickened (about 3-5 minutes).
  6. Stir in Parmesan cheese and half of both mozzarella and cheddar cheeses until melted. Mix in cooked pasta, chicken, and half of the turkey bacon.
  7. Transfer to the prepared baking dish, top with remaining cheeses and turkey bacon, then bake for about 25-30 minutes until bubbly and golden brown.
