  • 150 ml milk
  • 4 chai tea bags
  • 135 g unsalted butter
  • 135 g light brown sugar
  • 2 large eggs
  • 200 g self-raising flour
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 2 1/2 tbsp chai tea infused milk for frosting
  • 400 g icing sugar
  • 1/4 tsp cinnamon for frosting
  • 1/8 tsp ground cardamom for frosting
  • 1/8 tsp ground cloves for frosting
  • 1/2 tbsp demerara sugar
  • A generous pinch of cinnamon (approx 1/16 tsp)

Instructions

  1. Heat milk until hot but not boiling; steep chai tea bags for 10-15 minutes.
  2. Preheat oven to 160C (Fan) / 180C / 350F; line cupcake tin with cases.
  3. In a bowl, cream softened butter and sugar until smooth.
  4. Add eggs and vanilla extract; mix well.
  5. Incorporate sifted dry ingredients; combine gently.
  6. Fold in chai-infused milk until just combined.
  7. Fill cupcake cases evenly; bake for 20-25 minutes until golden.
  8. Cool completely on wire racks before adding frosting.
  9. For frosting: mix softened butter with icing sugar and chai-infused milk until desired consistency is reached; frost cooled cupcakes.
