Bruschetta Chicken Pasta is a vibrant and flavorful dish that brings together the classic elements of bruschetta with tender chicken and al dente pasta. This easy recipe is perfect for weeknight dinners or special gatherings, featuring juicy cherry tomatoes, fresh basil, and a hint of balsamic vinegar.

  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (for garnishing)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. In a skillet over medium heat, add olive oil and cook the seasoned chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove from heat and let rest before slicing.
  4. Combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, and pepper in a mixing bowl to make the bruschetta topping.
  5. Toss cooked pasta in the same skillet used for chicken with any drippings for flavor. Layer sliced chicken on top and add bruschetta topping.
  6. Garnish with grated Parmesan cheese and extra basil leaves if desired; serve warm.
