  • 2 cups chopped vegetables (like red onion, bell pepper, mushrooms)
  • 1 pound breakfast or Italian sausage
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito-sized tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 375° F.
  2. Heat olive oil in a nonstick skillet over medium heat and sauté chopped vegetables until softened. Transfer to a bowl.
