  • 4 salmon filets (about pounds, skins on)
  • ¾ cup peach preserves
  • ¼ cup bourbon
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • Garlic, salt, pepper, red pepper flakes (to taste)
  • Fresh peaches (for garnish)

Instructions

  1. In a medium bowl, combine peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes. Reserve half for later.
  2. Place salmon filets in a resealable bag and pour in the remaining marinade. Seal and marinate in the refrigerator for at least 30 minutes.
  3. Preheat oven to 375°F. Heat a skillet over medium-high heat with olive oil. Sear salmon skin-side up for 2-3 minutes until golden brown.
  4. Flip salmon skin-side down and add sliced peaches around them. Cook for another 2-3 minutes.
  5. Pour reserved marinade over salmon and peaches. Bake for 12-15 minutes or until the internal temperature reaches 145°F.
