  • 2 large eggs
  • 1/2 cup vegetable oil

  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 375°F and line a muffin pan with paper cups.
  2. In a bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually combine with dry ingredients.
  4. In a separate bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin tins with batter and swirl in cream cheese mixture using a toothpick.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
