  • 56 medium sweet potatoes (peeled and cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar (light or dark)
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and slice sweet potatoes into thin medallions; arrange in a baking dish.
  3. In a medium saucepan, melt butter with brown sugar, water, spices, and salt over medium heat until combined.
  4. Brush ¾ of the sauce over the sweet potatoes; cover with foil and bake for 45-50 minutes.
