  • 3/4 cup butter, softened
  • 2 1/8 cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups buttermilk
  • 1/2 cup butter, softened for frosting
  • 1 (8-ounce) package cream cheese, softened
  • 1 teaspoon vanilla for frosting
  • 3 1/2 cups icing sugar

Instructions

  1. Preheat your oven to 275°F (135°C) and grease a 9 x 13-inch baking pan.
  2. In a small bowl, mix the mashed bananas with lemon juice and set aside.
  3. Combine flour, baking soda, and salt in a medium bowl; whisk together.
  4. In a large bowl, cream the butter and sugar until fluffy. Beat in eggs one at a time followed by vanilla.
  5. Alternate adding the flour mixture and buttermilk to the creamed mixture. Fold in the banana mixture until just combined.
  6. Pour the batter into the prepared pan and bake for about one hour or until a toothpick comes out clean.
  7. Cool the cake in the freezer for 45 minutes before frosting with cream cheese icing.
