Ingredients

Scale
  • 1 pound zucchini (cut into 1/2-inch sticks)
  • 1 large egg
  • 1/3 cup flour
  • 3/4 cup bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • ground black pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C) and coat a baking sheet with cooking spray or oil.
  2. Set up three shallow dishes: one for flour mixed with garlic powder and salt; one for the beaten egg; and one for the bread crumb mixture combined with Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Coat each zucchini stick in flour, then dip into the egg, and finally roll in the bread crumb mixture until well coated.
  4. Place the breaded zucchini fries on the prepared baking sheet in a single layer. Bake for about 20 minutes or until golden brown and crispy, turning halfway through.
