4 large russet potatoes
5 large red potatoes
1 cup mayonnaise
2 tablespoons red apple vinegar
1 teaspoon sugar
A pinch of salt
½ cup white onion (minced)
1 red bell pepper (julienned)
1 cup carrot sticks (julienned)
1 stalk celery (diced)
¼ cup fresh chives (minced)
2 tablespoons fresh parsley (minced)
Dash of celery seed
Salt and pepper to taste
1 teaspoon Dijon mustard or yellow mustard
Instructions
Begin by boiling the potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool.
In a mixing bowl, whisk together mayonnaise, red apple vinegar, sugar, and salt to make the dressing.
While the potatoes cool, chop the veggies: mince the onion, julienne the bell pepper and carrots, and dice the celery.
Once cooled, cut the potatoes into cubes or leave them whole as preferred. Combine potatoes with dressing and chopped vegetables in a large mixing bowl.
Season with salt, pepper, and Dijon mustard to taste. Mix gently to combine all ingredients without breaking down the potatoes.
Cover and refrigerate for at least one hour before serving to allow flavors to meld.
