  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish with parchment paper.
  2. In a sauté pan, boil 1½ cups of fresh apple cider until reduced by half; combine with diced cold butter.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Gradually mix in the boiled cider blend until combined.
  5. Stir in flour carefully to avoid overmixing.
  6. Pour the batter into your prepared dish and bake for 22–25 minutes until golden brown.
  7. Cool slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
