  • 2 cups flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for topping)
  • ½ cup sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Reduce apple cider in a saucepan over medium heat until halved; cool.
  2. Preheat the oven to 350°F (175°C) and grease a 9×5 loaf pan.
  3. Cream together butter and brown sugar until fluffy.
  4. Beat in egg and vanilla extract until combined.
  5. Mix in flour, apple pie spice, baking powder, baking soda, salt, and reduced cider until just blended.
  6. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  7. Cool for 15 minutes in the pan before transferring to a cooling rack.
  8. Brush with melted butter and coat in cinnamon-sugar topping.
