  • 2 cups digestive cookies or graham crackers
  • ½ cup butter (melted)
  • 3 cups fresh apple cider
  • 3 cream cheese bricks (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs

Instructions

  1. Boil apple cider with mulling spices until reduced to about 1/3 cup; set aside to cool.
  2. Preheat the oven to 350°F.
  3. Make the crust by blending cookie crumbs, melted butter, salt, and powdered sugar; press into an 8” springform pan and bake for 10 minutes.
  4. In a stand mixer, combine cream cheese and brown sugar until smooth; add sour cream, vanilla, salt, cinnamon, and reduced cider.
  5. Mix in eggs and flour just until combined.
  6. Pour filling into cooled crust; bake in a water bath at 325°F for about 90 minutes.
  7. Cool gradually in the oven before refrigerating for at least eight hours before serving.
