  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it reaches about 1/4 cup; let cool.
  2. In a bowl, mix cold cream cheese, sugar, and vanilla until smooth for the filling; set aside.
  3. Cream softened butter with sugars until fluffy. Add egg yolks one at a time along with cooled apple cider.
  4. Whisk dry ingredients (flour, baking powder, baking soda, salt, and spices) separately and combine with wet mixture until just mixed.
  5. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined sheets; create an indentation for the filling and cover with more dough.
  6. Bake for 10-11 minutes until lightly golden. Cool on racks.
