  • 2 cups apple cider
  • 3 tbsp granulated white sugar
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 6 oz cream cheese, cold
  • 1/4 cup granulated white sugar
  • 2 tbsp apple cider reduction from above
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it thickens to about 1/4 cup.
  2. Beat cream cheese and sugar until smooth; mix in vanilla and set aside.
  3. Cream softened butter, brown sugar, and granulated sugar until fluffy; add egg yolks and vanilla.
  4. Combine dry ingredients and gradually add to wet ingredients until just mixed.
  5. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined sheets, create an indentation, fill with cheesecake mixture, and seal.
  6. Bake for around 11 minutes until edges are golden.
